File under cool foodie news: Fiori restaurant of Great Barrington, Mass., has installed a high-tech “hydro table” in the basement of their otherwise quaint little corner building on Railroad St.
Supplied by Shire Organic and Hydroponic Supply, a local indoor garden supply shop, the system is completely reusable and maximizes the use of water. This provides tremendous benefits for the restaurant, the customer, and the environment.
The hydro table is also an innovative way to offer the freshest home-grown herbs and vegetables to Fiori’s dinner guests. Kitchen-grown arugula, basil, sage, rosemary, and other fresh ingredients are now just feet away, and the benefit of sustainable technology speaks to the progressive philosophy of the restaurant and Berkshire County as a whole.
